Honey & Spice Baked Porridge with Pears

Ingredients
  • 2 cups rolled oats
  • Zest of ½ lemon
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp vanilla paste
  • 2 star anise
  • 500ml milk
  • 250ml cream
  • 2 ripe pears, peeled, cored & diced
  • ¼ cup honey, plus extra to serve
  • 100g roasted almonds, roughly chopped, divided

Method
  • In a baking dish, combine the oats, lemon zest, spices, milk, cream and stir to combine. Cover and refrigerate for 2 hours or overnight.
  • Preheat oven to 160°C Fan.
  • Remove oats from fridge and stir through pears, honey and half the almonds. Cover tightly with foil and bake for 25-30 minutes until the oats are cooked and milk is absorbed. Remove star anise and serve warm with extra honey and almonds over the top.
