Honey & Spice Baked Porridge with Pears
Ingredients
- 2 cups rolled oats
- Zest of ½ lemon
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tsp vanilla paste
- 2 star anise
- 500ml milk
- 250ml cream
- 2 ripe pears, peeled, cored & diced
- ¼ cup honey, plus extra to serve
- 100g roasted almonds, roughly chopped, divided
Method
- In a baking dish, combine the oats, lemon zest, spices, milk, cream and stir to combine. Cover and refrigerate for 2 hours or overnight.
- Preheat oven to 160°C Fan.
- Remove oats from fridge and stir through pears, honey and half the almonds. Cover tightly with foil and bake for 25-30 minutes until the oats are cooked and milk is absorbed. Remove star anise and serve warm with extra honey and almonds over the top.
